Before school broke up in December,  Seaforth kids were very excited to bring home their very own basil plant, to water and watch grow over Summer… and this is just the beginning!

HOW TO LOOK AFTER YOUR BASIL

  • Grow your basil in a container or in the ground
  • Basil likes the sun
  • Keep soil moist by watering
  • Pick leaves so it doesn’t flower
  • Start taking off tips when basil is about 15cm height

 STEPHANIE ALEXANDER’S BASIL PESTO RECIPE

(From Stephanie Alexander’s Kitchen Garden Companion – Penguin Lantern 2009).

Serves:  makes 1 cup

You will need:

  • Food processor
  • Bowl
  • Spoon
  • Screw top jar

Ingredients: 

  • 1 cup firmly packed basil leaves
  • 1/2 cup extra virgin olive oil, plus extra to seal
  • 1/4 cup pine nuts
  • 2 cloves garlic, crushed
  • Sea salt

WHAT TO DO: (Only attempt with parental guidance).

Put basil leaves, olive oil, pine nuts, garlic and salt in a blender or food processor and blend/process until smooth. Stop the machine once or twice & scrape down the sides with a spatula. When evenly blended, scrape the green paste into a bowl and stir in cheese.

Spoon paste into a clean and dry 250ml capacity screw top jar. Press down with the back of a spoon to ensure there are no air pockets and seal with a film of olive oil. Store in the refrigerator.
